Caramelized Onions with Spanish Chorizo in Red Wine Sauce
So sweet, so juicy, so good…👨🍳 Bricknic Chef's Recommendation
Caramelized Onions with Spanish Chorizo in Red Wine Sauce
Ingredients:
300g large onions, thinly sliced
100g Spanish chorizo, diced
240ml red wine (choose a good-quality wine)
30g olive oil
15g butter
20g brown sugar
Salt and pepper to taste
Fresh thyme leaves for garnish
Instructions:
Prepare the Onions:
Heat the olive oil and butter in the Bricknic Cooking Brick over medium heat.
Add the thinly sliced onions to the brick and sauté until they start to soften, about 5 minutes.
Caramelize the Onions:
Sprinkle brown sugar over the onions, stir to coat evenly, and reduce the heat to low.
Continue cooking the onions, stirring occasionally, until they turn golden brown and caramelized. This process may take 20-30 minutes. Be patient; slow caramelization yields the best flavor.
Add Chorizo:
Once the onions are caramelized, add the diced Spanish chorizo to the brick.
Cook for an additional 5-7 minutes, allowing the chorizo to release its flavorful oils and blend with the sweet caramelized onions.
Pour in Red Wine:
Pour the red wine into the brick, scraping the bottom to deglaze and incorporate any caramelized bits.
Allow the mixture to simmer over low heat for about 15-20 minutes, allowing the wine to reduce and the flavors to meld.
Season and Garnish:
Season the mixture with salt and pepper to taste. Keep in mind that chorizo can be salty, so taste before adding too much salt.
Garnish with fresh thyme leaves for an aromatic touch.
Serve:
Serve the caramelized onions and chorizo in red wine sauce as a topping for grilled bread, over creamy polenta, or as a side dish for meats. This flavorful combination also works well as a tapas dish.
