Chili is a very fulfilling recipe, usually made also with “carne” (meat). This week we decided to go vegetarian and add some fresh flavour thanks to some crème fraîche.
For this recipe, we opted for cooking on our kitchen stove, to have more control over the cooking process and adopt our brick as a ceramic pot!

What you need:
1 red peppers
1 can of black beans
1 fresh chilly
2 gloves of garlic
1 red onion
250g tomato sauce
Laurel leaves
1 tbs of crème fraîche
Olive oil
Salt & pepper
Instructions:
1. Preparation
a. Cut the onion into little cubes and mince the garlic. Chop finely the fresh chilly.
b. Cut also the pepper, preferably in small cubes.
c. Place the black beans into a colander and wash them off their water.
2. Cooking:
a. Start by frying for a few minutes the onion, the garlic and the chilly together with abundant olive oil.
b. Add also the peppers and fry everything until the peppers start to soften.
c. Finally, add the rest: the black beans, tomato sauce, a Lauren leaf, salt and pepper.
d. Cook for about 30 minutes with low fire and with the lid closed.
3. Serving:
a. Serve your vegetarian chili crème fraîche
b. If you like, feel free to add some fresh coriander on top!
